Aubergine bharta

Deeply smoky aubergine folded through sweet onions, tomatoes and warming spices, with lime for a bright finish.

Ingredients

  • 2 medium aubergines (about 650g)
  • 3 tbsp ghee or neutral oil
  • 3 red onions, peeled and sliced
  • Salt, to taste
  • 20g root ginger, peeled and finely grated
  • 2 garlic cloves, peeled and crushed
  • 2 small green chillies, slit lengthways
  • ½ tsp garam masala, plus extra to serve
  • ½ tsp turmeric
  • 1 × 400g tin chopped tomatoes
  • 1 lime, to serve

Method

  1. Slice the aubergines in half and place under a hot grill for about 15 minutes, until very charred and smoky.
  2. Sauté the onions in the ghee or oil for 15 minutes until soft.
  3. Stir in the garlic, ginger and chillies. Cook for 1 minute, then add the garam masala, turmeric and tomatoes.
  4. Scoop the flesh from the charred aubergines, add it to the pan and mash it into the mixture.
  5. Simmer until the liquid has evaporated and the mixture is starting to catch on the pan.
  6. Stir through the lime juice, check the seasoning and serve.
